As it is that time of the year for some of us and we will celebrating Easter soon, Yana made this Twisted Sourdough Bake. We are originally form Bulgaria and Easter is very special time for us.
We follow a few traditions then and we make special bread - sweet, similar to Panettone, or brioche, decorated with walnuts, almonds, raisins, could be filled with chocolate, or jam, or just plain.
This Twisted delight is inspired from the Bulgarian Easter bread and we will be making a few more similar bakes the up coming weeks.
So here it is what Yana did to create this beauty:
Ingredients :
- 370 g Strong White Canadian Flour
- 120 g warm milk
- 60 g warm water
- 3 tbs melted butter / unsalted
- 1 tbsp brown sugar
- 4g salt
- 200 g active stater
For the filling:
- 130g soft butter/ unsalted
- 120g brown sugar
- 1 1/2 tbsp cinnamon
- 40g blitzed in food processor walnuts
In the stand mixer bowl, add the warm liquids and dissolve the starter very well.
Add all the dry ingredients and kneed with the dough hook. It takes about 6-10 minutes depending on your mixer but dough has to be smooth and silky and stay on the hook. Even if the dough seems too stiff, don’t add water.
Leave in a separate clean bowl to proof. It took about 3 hours in warm oven - 30 degrees.
Once nearly done, mix with handheld mixer the Filling.
After it is doubled in size, speed and roll with rolling pin so you achieve rectangular with 5mm thickness.
Spread well and even the filling and roll into long shape.
With sharp knife, cut lengthwise in the middle and twist as you are creating plat with two strings.
Place in the bottom of your dutch oven, lined with baking paper to proof for about 1-2 hours, till doubled on size.
Bake in 200 degrees with lid on for about 30-40 minutes.
For the last 5 minutes, you can uncover and bake till golden.
